Hey! Happy Saturday! I think this must be one of the extremely few times I have blogged over the weekend but my week has been so crazy that I literally had no spare time. I miss being glued to the kitchen, honestly but at least I can proudly say that I have managed to drop 2kgs and I have lost centimeters around the most important parts, YAY! So I decided I’m spoiling myself with porridge lol, I know it sounds crazy but I am hooked. I have been passing by the millet and wishing I could have some.
So this is my Coffee-Nutella Millet Porridge with Summer Berries which I absolutely adored! Coffee millet porridge swirled with Nutella and topped with frozen berries! It’s the coffee, the Nutella, the sourness and sweetness of the berries that makes this porridge meal so delicious! So without wasting any time here’s the recipe…
3 Tbspn millet
300ml unsweetened almond milk
1/2 tspn vanilla essence
1 tspn brown sugar
2tspn decaf coffee
2 tspn Nutella
1/2cup frozen summer berries (strawberries, cherries, raspberries etc.)
Before cooking commences, measure out your 1/2 cup frozen summer berries and leave to thaw whilst cooking your porridge.
In a sauce pan, pour 150ml of almond milk and place on medium heat. Once your milk is boiling, add your 2 teaspoons of decaf coffee (you can gladly use and type of coffee) and mix until dissolved. Add vanilla essence and sugar and stir until dissolved. Add your millet and keep stirring whilst gradually adding more milk to make your porridge creamy, it should take about 15 minutes for the millet to be cooked then you can pour it into a bowl. Swirl your Nutella in your porridge for a sweet chocolate taste, then scatter your frozen summer berries and dig in.
Simple right? But so divine!
